Gluten-Free Chocolate Zucchini (Protein) Bread

Stacy & Dr. WegnerStacy Wegner, Dr. Robert Wegner’s wife, shares one of her family’s favorite recipes. It’s the perfect light spring treat that also packs a protein punch.

Gluten-Free Chocolate Zucchini (Protein) Bread

Stacy Wegner

  • 12 pitted dates (dried)
  • 4 eggs (or 8 egg whites)
  • 1 medium Zucchini, cut into chunks
  • ¼ cup Organic Coconut Oil
  • 1 tsp Pure Vanilla Extract
  • ½ cup Coconut Flour
  • ¼ – ½ cup Stevia (depending on desired sweetness)
  • ¼ cup unsweetened cocoa powder or cacao powder
  • 2 scoops chocolate protein powder (may use vegan or whey)
  • 1 tsp ground cinnamon
  • 1 tsp baking soda
  • Pinch of sea salt

Optional toppings: dark chocolate chips, dairy-free chocolate chips, raw pumpkin seeds, coconut chips

Pre-heat oven to 375 degrees. Place dates, eggs, zucchini, oil, and vanilla into a blender or food processor and blend until smooth. Add in coconut flour, cacao powder, stevia, protein powder, cinnamon, baking soda and sea salt and blend until smooth and thickened. You may need to add a little water to thin out the batter depending on the type of protein powder. Pour the batter into a well-greased or parchment lined regular sized loaf pan. Top with any optional toppings if you desire. Bake for 45-50 minutes or until the center is cooked through. Let cool and enjoy!
